Use of NIR Spectroscopy and Adulterant Screen for the Detection of Common Adulterants in Milk

چکیده
The value of milk on the open market is linked to its protein content, and standard methods for protein analysis rely on a simple nitrogen assay, with the protein concentration inferred from the nitrogen content. Consequently, the addition of chemicals rich in nitrogen, such as urea, can artificially increase the apparent protein content and thus the price demanded. Urea occurs naturally in milk and is typically present at levels of about 0.02% 0.05%. Higher levels of urea in milk are present only in cases of adulteration. Cane sugar is another known milk adulterant used to increase its carbohydrate content and weight. This allows extra water to be added into the milk without detection from a standard lactometer test for milk quality.

At-Site Screening and Measurement of Adulterant Levels in Bovine Milk by Mid FTIR Spectroscopy
For this reason, there is signifi cant interest in rapid, easy to use analytical methods that can detect if milk is adulterated and then measure the levels of the adulterants in milk. In a recent publication [1], researchers measured adulterants in milk in the laboratory using the Agilent Cary 630 FTIR spectrometer and showed that the mid FTIR system is superior to NIR spectroscopy for these de...
متن کاملExploring authentic skim and nonfat dry milk powder variance for the development of nontargeted adulterant detection methods using near-infrared spectroscopy and chemometrics.
A multinational collaborative team led by the U.S. Pharmacopeial Convention is currently investigating the potential of near-infrared (NIR) spectroscopy for nontargeted detection of adulterants in skim and nonfat dry milk powder. The development of a compendial method is challenged by the range of authentic or nonadulterated milk powders available worldwide. This paper investigates the sources ...

Background: Milk is one of the most nutritious foods providing a variety of proteins, fats, minerals, and vitamins needed to maintain, grow, and develop the body. The aim of this study was to assess microbial and chemical adulterants of raw cow milk collected from dairy farms of Hlabisa villages, KwaZulu-Natal Province, South Africa. Methods: A total of 68 raw cow milk samples were obtained fr...
متن کاملSimultaneous detection of multiple adulterants in dry milk using macro-scale Raman chemical imaging.
The potential of Raman chemical imaging for simultaneously detecting multiple adulterants in milk powder was investigated. Potential chemical adulterants, including ammonium sulphate, dicyandiamide, melamine, and urea, were mixed together into skim dry milk in the concentration range of 0.1-5.0% for each adulterant. Using a 785-nm laser, a Raman imaging system acquired hyperspectral images in t...
متن کاملDetermination of Adulterants in Food: A Review
This paper proposes the use of the least-squares support vector machine (LS-SVM) as an alternative multivariate calibration method for the simultaneous quantification of some common adulterants (starch, whey or sucrose) found in powdered milk samples, using NIR spectroscopy with direct measurements by diffuse reflectance. Due to the spectral differences of the three adulterants a nonlinear beha...
